Getting back on track! I have gained 6.8 lbs in the last 2 weeks! Time to get serious
Well, sorry I haven't been around in a month! Been super busy and a trip and just quite a bit going on! I had lost down to 112, but recently gained back up to 118.6 (in just 2 weeks!) Shows you what being "happy" and letting your guard down and keeping snacks around the house! So, I haven't a clue what's going on with my font and bold and type and spacing, it's ticking me off, so I'll keep this short and sweet!
For breakfast today I had 1 large scrambled egg (nonstick pan, nonstick cooking spray, a little salt and pepper and that's it for my eggs), 1 piece of whole wheat toast with sugar free strawberry preserves, plus my usual 2 cups of coffee with splenda and creamer!
For lunch I had a small portion of my leftover Lemon Chicken and Rice (I didn't want the carbs, but that's all I had to choose from!)
For dinner I made Black Bean and Green Chile Chicken Enchiladas. I followed the following recipe and added 1/2 a can of drained black beans while simmering. I ate 4 since we didn't have a side since our beans were in the enchiladas! Delish! I topped mine with some fat free shredded cheese!
I am working on my 64 oz of water today. I keep a 64 oz pitcher in the fridge of water. My goal is to empty it before bed and refill it for the next day! I add a little splash of lemon juice to each cup of water for taste and it acts as a natural diuretic which helps keep me from retaining water!
Easy Green Chicken Enchiladas

Wow delicious! In the oven within 20 minutes! Moderate carbs, low fat, high protein!
Ingredients
- 4 servings salsa
- 4 1/2 servings (1 can) green chile enchilada sauce
- 4 1/2 servings (9) mission yellow corn tortillas
- 4 servings fat free shredded cheddar cheese kraft
- 5 servings tyson premium chunk white chicken (1 can drained)
Directions
- Drain chicken and place in skillet or pan with salsa and cook until heated through.
- Spray 9" square pan with nonstick cooking spray. Pour 1/4 cup of geen sauce in bottom of dish to coat bottom to prevent tortillas from sticking. Dry cook the tortillas in small nonstick skillet for approx 7-10 seconds per side just until softened. Place on food prep surface. Fill tortilla with chicken mixture. Sprinkle a small bit of cheese on each tortilla then roll up and place in pan. I had to layer mine since they wouldn't fit, but they still turn out the same. When this is completed for all tortillas, pour sauce over top of all enchiladas. Sprinkle remaining cheese over top of all enchiladas.
- Bake for 15-20 minutes at 400 degrees.

Step by step, how to use up 5 lb chicken breasts!
I thought I would show you step by step what I do with a 5 lb package of boneless skinless chicken breasts! I made 3 complete meals with this 5 lbs!
1. take out a breast, clean it of excess fatty tissue if any |
2. Fillet the chicken breast, so that you end up with 2 pieces of about the same thickness |
3. I cut all the way through like this. I end up with a nice strip for grilling, then a thinner smaller piece for dicing. |
4. I dice the smaller piece (unless I am making chicken strips, then I would cut in 1/2 and use for that!) for chicken dishes, and use the larger breast piece for grilling. |
5. We prefer the McCormick Mesquite Marinade mix. I put all the breast pieces in a gallon ziploc bag. I mix my marinade and pour it over the chicken in the bag! |
6. I lay the bag flat, get all the air out, seal up the bag well, then freeze or refrigerate until I need. Defrost 1-2 days ahead of time in the fridge. |

Sorry I haven't had anything to say lately!
Well, actually our internet has been down for 6 whole days! We were pretty sad and pitiful around here without it! I took lots of pics of meals this week and I will be posting them with the corresponding recipes later this week. If you ever are looking for a good meal idea, don't hesitate to ask! I have many recipes I haven't even tried yet! We are working on new healthy or healthified recipes more and more! I am also always looking for healthy sides (besides green beans lol), so if you have any of your own, please share with me!
I should probably ad that I had gained up to 117.8, lost down to 115, only to wake up today back at 117.8! I KNOW it has a lot to do with the snacks laying around the house and office! I have one week to lose those 5 pounds that I found "lying around" lol

Had to share this super simple idea/recipe
This week, I found pork chops on sale. They weren't boneless, they were different cuts. There was no consistency at all. Almost like those "spare" chops or maybe the "new guy" cut them lol. So I picked up a package, unsure what I was going to do with them. I usually grill my boneless chops, but these had bones, so I couldn't do that. I mulled over it for a few days. Finally I decided to experiment. I got the trusty crockpot out. I pulled out the pork chops, cut the package open, dusted each side with Lawry's Seasoned Salt, placed in the crockpot, turned it on high for 4 hours and went to work. (changed cooking time to 3 hours on high, 6 on low!) By the time I got home, of course they were falling apart BUT delicious! Even my 10 year old that doesn't like much of anything other than bean burritos loved them! Hubby said they were definitely a hit! The only thing I would change next time is the cooking time. One chop was on the dry side. Despite the fact that it made plenty of broth (and if I had made potatoes, I would have drained the juices and made pork gravy!!), one chops was dry. I will change the cooking time to 3 hours next time and I may check the chops at 2 hours. I may play with this recipe since cooking on low may be the answer so that it isn't done too soon before I get off work for lunch. I like my meals to take right at 4 hours so they are just finishing up about 11:30 when I head home from work!

Great Weekend
I don't think I even want to get on the scales Monday. I had 5 of my 6 kiddos here this week, plus Shena's boyfriend, and my grandson, Kayson. I went a little crazy with the "spoiling". We haven't eaten everything yet, but there is still one more day. I haven't had ANY sleep because of Zoe and her no sleeping at night habits. Anyway, I hate that it's so cold these days. I want to get back to exercising so I can "firm up". I haven't tried any new recipes. I have been so busy with taking care of my family and unpacking and organizing the new house, I haven't had time for myself. I am determined to keep this house clutter free. That starts with everything having a place. We are also making the kids keep their toys in their rooms instead of scattered from front to the back of the house and everywhere in between!
